Rockin Quinoa with Peppers, Kale and Balsamic Vinegar

After my post on gluten free grains you might want a way to fix some quinoa that taste a little better than with just some sea salt! I actually had sometime in the kitchen to try this out, let me know what you think and if it doesn’t taste as good as I thought it did 🙂

1 cup of rinsed Quinoa

1 red pepper

1 handful of Kale

sea salt

Virgin Unrefined Coconut Oil

Balsamic Vinager

Go ahead and fix the Quinoa the way you normally do. I used 1 cup of quinoa to 1 1/2 cup of water, and I added a pinch of sea salt. Let quinoa get to a boil and then turn to low heat until it becomes ready and no water remains, you should be able to fluff it.

While that is cooking, I placed a tablespoon or so of coconut oil in a pan with a couple tablespoons of balsamic vinegar. If your handful of Kale or your pepper is large you may need a little more

I would just cook the veggies on low heat until the peppers are a little soft and you feel they are well coated with the liquid.  Once the veggies are to your desire consistency pour the mixture along with the yummy coconut and balsalmic goodness right on top of your quinoa.

Grab a couple bowls/plate and share with a friend or someone special 🙂 and if no one is around feel free to eat it all yourself.  I mixed it all together and had a bowl and add sea salt to taste!
