Rockin Quinoa with Peppers, Kale and Balsamic Vinegar

After my post on gluten free grains you might want a way to fix some quinoa that taste a little better than with just some sea salt! I actually had sometime in the kitchen to try this out, let me know what you think and if it doesn’t taste as good as I thought it did šŸ™‚

1 cup of rinsed Quinoa

1 red pepper

1 handful of Kale

sea salt

Virgin Unrefined Coconut Oil

BalsamicĀ Vinager

Go ahead and fix the Quinoa the way you normally do. I used 1 cup of quinoa to 1 1/2 cup of water, and I added a pinch of sea salt. Let quinoa get to a boil and then turn to low heat until it becomes ready and no water remains, you should be able to fluff it.

While that is cooking, I placed a tablespoon or so of coconut oil in a pan with a couple tablespoons ofĀ balsamicĀ vinegar. If your handful of Kale or your pepper is large you may need a little more

I would just cook the veggies on low heat until the peppers are a little soft and you feel they are well coated with the liquid. Ā Once the veggies are to your desireĀ consistencyĀ pour the mixture along with the yummy coconut and balsalmic goodness right on top of your quinoa.

Grab a couple bowls/plate and share with a friend or someone special šŸ™‚ and if no one is around feel free to eat it all yourself. Ā I mixed it all together and had a bowl and add sea salt to taste!
