Simple Summer Salads

I recently did a class at Whole Foods and I thought I would share with you the recipes we did. So yum, and nutritious. Very basic and flavorful.

Beets, Kale, and cucumbers took center stage for each salad and I know at least one will be a new favorite for you.
When I do classes at Whole Foods I have to follow the Health Starts Here guidelines. This involves no oils at all. So when you are make these feel free to add a little olive oil into the dressing, but only if it is good quality cold pressed stuff 🙂   Enjoy!

Simple Cucumber dill SaladImage

1-2 english cucumbers sliced in half moons

2-3 tsp of coconut sugar or honey

1/4 cup of lemon juice

1/2 red onion thinly sliced

fresh dill, 1/4  cup loose

mix lemon juice and coconut sugar, and dill together.  Add chopped cucumber and red onion to a bowl.  Mix in lemon juice dressing and toss the salad.

Spicy Raw Kale Salad

1 bunch of Curley Green Kale

1 avocado ( ripe)

handful of cherry tomatoes

1/4 cup chopped red onion

1/4 c daikon Radish

sprinkle of sunflower seeds

1-2 cloves of garlic

Separate Kale from stem and tear in bite size pieces. Place avocado on kale in bowl and massage the leaves with the avocado, sprinkle sea salt and garlic and continue massaging and mixing

Add to top of salad the tomatoes, onion, radish and sunflower seeds and serve. This is a salad that gets better as it sits about 10 min and all the flavors merge. By far my favorite salad ever.

Dont judge beets by what your mom tried to feed you out of the can at Thanksgiving. Beets raw, juiced and baked are super yummy, so eat them up 

Raw Citrus Beet Salad

2-3 beet roots shredded

1 shallot

1-2 large oranges juiced

1 1/2 teaspoon of honey

1/4 cup of balsamic vinegar

sea salt and pepper

make dressing:  in food processor mix orange juice, 2 tsp of orange zest, shallot, 1/4 balsamic, honey, and salt and pepper.

Add dressing to beets, do not flood beets add to keep it light, you should have extra dressing. Top with orange zest.
