Pumpkin Chia Coconut Smoothie

ImageIts Fall!!! Hello crisp in the air and football season. Although my NY Giants are not doing so hot there is still time to recover :). All this talk about pumpkins and Pumpkin Spice Lattes, I thought of my own healthy version. I would probably go into a sugar coma if I had the sweet treat from Starbucks, of course McDonald’s has their version and, well I don’t go to McDonald’s.   I recently did a class at Whole Foods on the immune system and thought it was fitting to have a nice smoothie to fit the season.   Some areas are not as chilly as others, so this cool treat might just hit the spot.

When I make smoothies for others I try to give you options that are easy for everyone. Chia seeds are becoming easier to find, and so is coconut water and milk. If you have access I think the recipe is great with young coconut meat and fresh young coconut water.I also only used cinnamon for the recipe but upping the flavor with pumpkin spice is amazing!  Pin the crap out of this and enjoy, I know I did and have!!

Remember pumpkin is part of the squash family, so although this will seem like dessert you are really just drinking veggies :).

This recipe makes enough for you and the kids or you and your sweetie.



Pumpkin Chia Coconut Smoothie

1 c Coconut Milk ( canned is fine depends on the creaminess you want)
1 c Coconut Water
1 1/2 c of pumpkin puree ( can or other)
1 tsp cinnamon ( pumpkin spice also is great)
2 tablespoons of shredded coconut ( optional)
2 tablespoons of chia seeds
large handful of spinach
1 tablespoon of maple syrup ( optional)
2 packets of stevia ( if no maple Syrup)
banana can also be optional along with, goji berries, nutmeg, or cardamon play around
Top with chia seeds, bee pollen and coconut for added flare

Add all to the blender of your choice and blend away, remember the fun add ins, and also ice if you want it extra cold.   Pin it, facebook, instagram and twitter this bad boy all the place!

    Are chia seeds like flax seeds in that it’s better for you if they are ground??

      Either is fine with chia. They do need some sort of liquid to let the raw chia gel. ( sorry for the long delay on reply)
